8 slices bread Texas Toast suggested
1 – 1 ½ sticks butter melted
8 slices American cheese
1 cup shredded cheddar cheese
1 cup shredded pepper jack cheese
1 cup shredded mozzarella cheese
1 – 2 jalapenos grated
Garlic powder
Grated Parmesan cheese
Instructions
1. Preheat the grill to hot. Turn it to low before adding the sandwiches.
2. Brush the outer side of each slice of bread with butter. Place the slices, buttered side down, on the top rack of the grill. Note: if you don’t have a top rack, do not preheat your grill to hot, just turn to low heat and grill directly on that.
3. Butter the top side of each slice. Continue grilling until a light crust forms on the bottom side and some of the moisture dries out. Flip.
4. Top each slice with the American cheese. Then top each bottom side of the sandwich with about ¼ cup of cheddar, ¼ cup pepper jack and ¼ cup of mozzarella.
5. Top each bottom slice with the jalapeno (optional, but it really adds great flavor!)
6. Take the top sandwich slices (with only the American cheese slicand place on top of the bottom slices. Shut the grill lid and cook about 2 ½ to 3 minutes, to allow the cheese to melt.
7. Butter the tops of the sandwiches. Flip the sandwiches and give them a slight mashing with the spatula. Butter the top sides. Shut the lid and continue to cook for 2 minutes.
8. Butter the top sides of the sandwiches again and sprinkle with garlic powder, to taste. Flip over and place on the lower grill over low heat. Cook until darker grill marks appear and then flip.
9. Brush the tops with butter and sprinkle with the Parmesan cheese, to taste. Continue cooking until grill marks have formed on the underside of the sandwiches.
Serve immediately
